This intense creation combines habanero's fruity fire with Thai red chilli's bright heat, balanced by roasted Australian carrots and traditional koji fermentation. Through carefully paced fermentation, complex flavours emerge and harsh edges soften, resulting in serious heat with depth and purpose.
